No Bake Cookie Dough Fudge

It’s been a couple of weeks since my last update. It was a combination of busy and sick. As a result, not only did I neglect updating this blog but we were also a bit more boring with our cooking for a bit. We still managed to more or less avoid pre-made frozen food. But simple turkey tacos and spaghetti made with sauce from a jar does not make for a very interesting blog.

This next week should be a bit better. Mike is making Yakisoba for a couple of nights, and I’m looking forward to Turkey Burgers. We’ve made these burgers once before and they are just so good.

But for now, the newest recipe we’ve tried is a bit different from what I’ve shared so far. Fudge!

The weather started getting hot last week when Mike found this recipe for super easy no bake cookie dough fudge. Neither of us could resist trying it out. My theory was it looked like a great recipe to bring in for the next work party. But I could hardly do that without testing it is in fact as good as it sounds! (Spoiler: It is).

This recipe was so easy. I have memories of “helping” my mom make fudge for Christmas gifts one year but I didn’t remember the process at all. It was so nice to be able to make a yummy treat without a lot of work or using the stove on a hot day.

I was a little bit worried when I first started on this recipe because it occurred to me that I probably should have considered if our cheap  little handheld kitchen aid mixer would be adequate for this recipe. Thankfully it was!

My main reaction while making this super easy recipe was how much it looked and felt like cookie dough, except for perhaps being a bit more fluffy in the initial steps. By the final step though, I totally felt like I was staring down at a bowl of cookie dough.

My only real error with this recipe was an incorrect belief that I had parchment paper at home for lining the pan. As it turns out, it was just an empty box of parchment paper. So I had to make do with foil. It wasn’t as ideal but it did the trick and no one is the wiser.

We got around 16 large pieces of fudge from this recipe. You could easily double it if you want to do small bit size pieces. Plus I still have enough ingredients left over to make a second batch. I think I’ll make some for work. The test was a total success! We both loved the fudge and the name is well deserved. It feels like eating cookie dough sans the risk of salmonella!
